Vegetables play major role in the National developmental programmes to alleviate hunger and malnutrition. In India tremendous progress has been made in the recent past in the vegetable production and India emerged second largest producer of vegetables in the world after china. The total production of vegetables has increased from 23.4 million tons in 1961-62 to the tune of 146 million tons in 2010-11. This remarkable transformation from subsistence vegetable farming in sixties to the present commercial production has happened mainly due to technological development coupled with huge increase in population and resultant increase in market demand mainly from the high and middle income segment of the population. However, considering the demand to meet the requirement of 300 g vegetables per caput per day for the burgeoning population with annual growth rate of 1.93 percent and for processing industries an export market, India need to produce 300 million tones of vegetables by 2050 mainly through the enhancement in productivity from the present 17.3 tons per hectare. These challenges call for greater technology support to maximize productivity land and water, biotic and abiotic stresses and rising cost of vegetable production. The first volume of this book series (Volume I) mainly dealt with comprehensive information for 14 important vegetable crops and in Volume II comprehensive information on 14 important general aspects of Vegetable science including nutrient and phyto-chemical potential of vegetables, quality production of seedlings and grafts, in vitro propagation and conservation, biotechnology approaches in vegetable breeding, crop modelling, organic production and breeding for resistance to high temperature stress have been documented. The present volume III of this book series “Handbook of vegetables” (Volume III) adorned by 30 highly reputed contributors of India and abroad dealt with comprehensive information in the array of origin, distribution and variation, cytology and botany, floral biology, genetics, breeding methods, biotechnological innovation, agronomy of the crop, disease and pest management, value addition and seed production for 16 important vegetable crops viz., muskmelon, cucumber, bitter gourd, bottle gourd, ridge and smooth gourd, ash gourd, cabbage, French bean, drumstick, radish tropical tuber crops, vegetable amaranth, different leafy vegetables, vegetable soybean and mushrooms. Unique feature of the book series also lay on more than 100 photographs in each vol. on wild relatives of different crops, species variability, cultivar variability, pest disease and physiological disorders, etc. Such documentation of different aspects and features through photography has not so far been made in any book of vegetable science. This text cum reference book has basically been prepared for the graduate and post graduate level students of Agricultural Universities of India and abroad. Teachers, researchers, professionals, vegetable growers and even nutritionists and dieticians will also get benefit from this book.
